  • 2 large boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup dry white apple vinegar
  • 4 cloves garlic (minced)
  • ¼ cup heavy cream
  • 1/3 cup freshly grated Parmesan cheese
  • Fresh parsley (for garnish)
  • 2 teaspoons Italian seasoning
  • Salt
  • Pepper
  • ¼ cup flour
  • 3 tablespoons butter
  • 1 teaspoon Worcestershire sauce
  • 1 cup chicken broth
  • 2 tablespoons cornstarch (+ 2 tablespoons cold water)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon each: dried parsley, mustard powder
  • ½ teaspoon each: dried oregano, dried basil


Instructions

  1. Slice chicken breasts in half lengthwise and pound to about ½ inch thick. Pat dry.
  2. Season chicken with Italian seasoning, salt, and pepper; dredge lightly in flour.
  3. In a skillet, heat olive oil over medium-high heat. Sear chicken for 4-5 minutes on each side until golden brown; set aside.
  4. Deglaze pan with white apple vinegar and scrape browned bits. Let simmer until reduced by half.
  5. Add butter, minced garlic, Worcestershire sauce, and chicken broth; stir to combine.
  6. For a thicker sauce, mix cornstarch with cold water and add to the pan.
  7. Stir in heavy cream and Parmesan until smooth; return chicken to the skillet and simmer for about 5 minutes.
  8. Add lemon juice before serving and garnish with fresh parsley.
