  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 4 tablespoons butter
  • 6 garlic cloves, minced
  • ½ cup chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped parsley
  • ½ teaspoon red pepper flakes (optional)
  • 1 cup white rice
  • 2 cups chicken broth
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon chopped parsley


Instructions

  1. Season chicken breasts with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet and sear chicken until golden brown, about 5–6 minutes per side. Remove from skillet.
  3. In the same skillet, melt 3 tablespoons of butter and sauté minced garlic until fragrant. Add chicken broth and lemon juice; simmer for 3–4 minutes.
  4. Return chicken to the skillet to warm through in the sauce.
  5. In a separate saucepan, melt 1 tablespoon of butter and sauté more garlic before adding rice. Stir well.
  6. Pour in chicken broth, bring to a boil, cover, and simmer for about 15 minutes.
  7. Stir in parmesan cheese and chopped parsley into the rice before serving.
