  • 4 tablespoons melted vegan butter
  • ¾ cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour (regular or gluten-free)
  • 1 cup old-fashioned rolled oats
  • 4 tablespoons melted vegan butter (for swirl)
  • ⅓ cup light brown sugar
  • 2 tablespoons cinnamon
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup powdered sugar
  • 2 oz softened vegan cream cheese


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until well combined.
  3. Gradually add baking powder, baking soda, cinnamon, salt, flour, and oats to the wet mixture. Stir gently until just combined.
  4. Pour half the batter into the greased loaf pan. In a separate bowl, combine melted vegan butter, brown sugar, and cinnamon for the swirl; spread half over the batter.
  5. Layer in the remaining batter and top with the rest of the cinnamon swirl mixture.
  6. Bake for 50–60 minutes or until a toothpick inserted comes out clean. Cool completely before frosting with a mixture of powdered sugar, melted vegan butter, and softened vegan cream cheese.
