  • 1 tbsp grated orange zest
  • 2 cups cranberries (fresh or frozen)

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a muffin tin with grease or liners.
  2. In one bowl, mix flour, sugar, baking powder, and baking soda. In another bowl, whisk eggs, oil (or butter), milk, vanilla extract, orange extract (if using), and orange zest until smooth.
  3. Pour wet ingredients into dry ingredients and mix gently until just combined. Fold in cranberries.
  4. Fill muffin cups two-thirds full and sprinkle with coarse sugar if desired.
  5. Bake for about 20-22 minutes until a toothpick inserted comes out clean.
  6. Cool for five minutes in the pan before transferring to a cooling rack.
