- 1 yellow onion (diced)
- 3 carrots (sliced)
- 2 stalks celery (sliced)
- 1 tablespoon tomato paste
- 3 cloves garlic (minced)
- 2 cups dry green lentils (sorted and rinsed)
- 1 can crushed tomatoes (14.5 ounces)
- 4 cups vegetable broth
- 3-4 cups water
- 1 tablespoon fresh lemon juice
- Black pepper (to taste)
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 2 bay leaves
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion for 2-3 minutes until softened.
- Add sliced carrots and celery; sauté for an additional minute. Stir in tomato paste and sauté for another 2-3 minutes.
- Incorporate minced garlic along with Italian seasoning, paprika, cumin, bay leaves, and black pepper; sauté for about 1 minute.
- Add sorted lentils, crushed tomatoes, vegetable broth, and 3 cups of water. Bring to a boil, then reduce heat to medium and simmer for 20-30 minutes until lentils are tender.
- Remove bay leaves and stir in fresh lemon juice before serving.
