  • 1 can (400 ml) coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 500 g (1 lb) large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • Fresh cilantro, chopped for garnishing
  • Lime wedges for serving
  • Cooked rice or naan bread for serving


Instructions

  1. Prepare ingredients: chop onion, mince garlic, and grate ginger.
  2. In a heavy-bottomed skillet, heat coconut oil over medium heat. Sauté onion until translucent; add garlic and ginger, cooking for an additional minute.
  3. Add curry powder, turmeric, and cumin; cook for 2 minutes to release flavors.
  4. Stir in coconut milk, soy sauce, lime juice, salt, and pepper; mix well.
  5. Add shrimp and cook for 5–7 minutes until pink and cooked through.
  6. Garnish with chopped cilantro and serve hot with rice or naan.
