Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent (about 5 minutes). Stir in crushed garlic for an additional minute.
- Add cleaned celery and quartered potatoes to the pot, stirring well to combine.
- Pour in chicken or vegetable stock; bring to a boil, then reduce heat. Simmer uncovered for about 20 minutes until vegetables are tender.
- Remove from heat; blend the soup until smooth using a blender or immersion blender.
- Return blended soup to heat, stir in parsley, season with salt and pepper, and simmer on low for another 5 minutes before serving.
