Ingredients
- 4 boneless skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth

- ½ cup shredded cheddar cheese

- 1 tsp onion powder
- 1 tsp smoked paprika
- Salt and pepper (to taste)
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- ½ tsp garlic powder
- ¼ tsp dried thyme
- ½ cup grated Parmesan cheese
- Fresh parsley (chopped)
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Cook chicken for 6-7 minutes on each side until golden brown and cooked through; set aside.
- In the same skillet, add rice and chicken broth; bring to a boil. Reduce heat to low, cover, and cook for 18-20 minutes until rice is tender.
- In another pan, melt butter over medium heat. Whisk in flour until smooth; gradually add milk and chicken broth while whisking until thickened.
- Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted. Combine with cooked chicken and rice in the skillet.
- Garnish with fresh parsley before serving.
