Ingredients

  • ½ lb fettuccine (or your choice of pasta)
  • 2 tbsp extra virgin olive oil
  • 9 large cloves of garlic (minced)
  • 1 medium yellow onion (diced)
  • 2 cups chopped kale
  • ½ cup tahini paste
  • Juice and zest of ½ a lemon
  • Nutritional yeast, salt, black pepper, and pure maple syrup to taste


Instructions

  1. Boil water in a large pot. Cook the fettuccine according to package instructions. Reserve about 2 cups of pasta water before draining.
  2. In a large stockpot, heat olive oil over medium heat. Sauté diced onions and minced garlic until onions are translucent. Add chopped kale until wilted.
  3. Stir in salt, black pepper, nutritional yeast, tahini paste, maple syrup, lemon juice, and zest. Mix well.
  4. Add 1 cup of reserved pasta water to deglaze the pot. Reduce heat to low and toss in cooked fettuccine until evenly coated; add more pasta water if needed for desired consistency.
  5. Serve hot with optional toppings like crispy tofu or red pepper flakes.
