Ingredients

  • oil
  • 3 lb chuck roast (trimmed if needed)
  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 1 cup beef broth
  • ⅓ cup water
  • 1 tbsp cornstarch
  • 2 lbs potatoes (optional)
  • 1 lb carrots (optional)
  • 1 yellow onion (optional)


Instructions

  1. Coat each side of the roast with oil.
  2. In a small bowl, combine steak seasoning and thyme. Liberally season both sides of the roast.
  3. Heat skillet over high heat until hot.
  4. Sear each side of the roast for 2-3 minutes until browned. Place roast in slow cooker.
  5. Pour beef broth into skillet and allow it to simmer for one minute. Scrape bits off the bottom of the skillet. Pour all liquid from skillet into the slow cooker.
  6. If using vegetables: wash, peel, and cut them into large pieces. In a large bowl, drizzle with oil and sprinkle on seasonings. Mix until evenly distributed and top roast with vegetables.
  7. Cook on low for approximately 7-8 hours or high for 3.5-4 hours. Low is preferred for optimal tenderness.
  8. Around hour 7-8 (or 3.5-4 if on high), begin checking for tenderness with a fork. Once edges start falling apart, dissolve cornstarch in water and pour into slow cooker. Stir well to combine.
  9. Cover and allow to cook for an additional hour or until super tender. If gravy isn’t thick enough after an hour, leave slow cooker on high with lid off while preparing meat.
  10. Carefully remove meat from slow cooker onto cutting board. Separate meat from fatty sections; discard fat. Place large chunks of meat on platter or back in slow cooker to serve.
