  • 4 boneless, skinless chicken breasts
  • 1 packet dry ranch dressing mix
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 10 oz can Rotel diced tomatoes with green chilies
  • 15 oz can whole kernel corn
  • 15 oz can black beans
  • 8 oz block plain cream cheese
  • 2 fresh limes (juiced)
  • ½ cup chicken broth


Instructions

  1. Place chicken breasts in a slow cooker. Add drained black beans, corn, Rotel tomatoes, onion powder, ranch dressing mix, and ground black pepper.
  2. Squeeze lime juice over the ingredients and pour chicken broth on top. Add the block of cream cheese.
  3. Cover and cook on HIGH for 3-4 hours or LOW for 5-6 hours until chicken reaches an internal temperature of 165°F.
  4. Remove chicken from the slow cooker, shred using two forks, and return to the pot. Mix until well combined.
  5. Serve hot over rice, in tacos, or as a topping for nachos.
