Ingredients
- 260 g all-purpose flour
- 25 g white sugar
- 5 g salt
- 5 g yeast
- 70 g milk
- 70 g water
- 150 g unsalted butter (125 g for layering and 25 g for the dough)
- 400 g white sugar (for coating)
Instructions
- Prepare the Butter Layer: Roll the 125 g unsalted butter into a 5" x 13" square and refrigerate until firm.
- Make the Dough: In a bowl, mix together flour, sugar, yeast, salt. Add cold milk, water, and remaining butter. Mix until smooth.
- Chill Overnight: Wrap dough in plastic wrap and refrigerate overnight.
- Combine Dough and Butter Layer: Roll out chilled dough into a rectangle; encase the cold butter within it.
- Create Layers: Roll out again to three times longer; fold as directed to form layers.
- Cut Dough Strips: Roll out to an 8" x 16" rectangle; cut into twelve strips.
- Form Cruffins: Layer two strips, roll tightly, and place in muffin tins.
- Proof & Bake: Allow to rise until tripled in size; bake at 356°F for about 20 minutes.
