  • 1 red bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 3 green onions (thinly sliced)
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons brown sugar
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste


Instructions

  1. Season the cubed chicken with salt and pepper.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for about 4-5 minutes until golden brown. Remove from the pan.
  3. If necessary, add another tablespoon of oil to the skillet. Sauté diced bell peppers for about 2 minutes until softened, then add minced garlic and grated ginger; cook for an additional 30 seconds.
  4. Add pineapple chunks to the skillet and cook for about 3 minutes until caramelized.
  5. In a small bowl, mix soy sauce, rice vinegar, and brown sugar before pouring it into the skillet to simmer.
  6. Return the chicken to the skillet, toss everything together, and let simmer for another 2-3 minutes until slightly thickened.
