  • 1 medium Honeycrisp Apple (or other apple varieties)
  • 1/2 cup Dried Cranberries (or golden raisins/diced dates)
  • 1/4 medium Red Onion (finely diced)
  • 1 cup Pecans (or walnuts)
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Red Apple Vinegar (can substitute with apple cider vinegar)
  • 1 tablespoon Lemon Juice (fresh is best)
  • 3 tablespoons Tahini (can substitute with Greek yogurt)
  • 1 teaspoon Dijon Mustard (can substitute with whole grain mustard)
  • 1/2 teaspoon Garlic Powder (or fresh minced garlic)
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Sea Salt (to taste)


Instructions

  1. In a skillet over medium heat, toast the pecans with maple syrup until fragrant and slightly caramelized (about 5 minutes). Remove from heat and let cool.
  2. Chop the celery into bite-sized pieces, dice the apple into small cubes, and finely chop the red onion.
  3. In a mixing bowl, whisk together tahini, lemon juice, red apple vinegar, Dijon mustard, garlic powder, onion powder, sea salt, and maple syrup until smooth.
  4. Combine chopped celery, diced apple, dried cranberries, red onion, and cooled pecans in a large bowl. Pour the dressing over the mixture and toss gently to coat.
  5. Serve chilled or at room temperature.
