  • 1/4 cup Honey
  • 1/4 cup Lime juice
  • 1 tablespoon Lime zest
  • 2 cloves Minced garlic
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 cup Jasmine rice
  • 2 cups Chicken broth
  • 2 pieces Diced avocado
  • 1/2 small Red onion
  • 1/4 cup Fresh cilantro
  • 1 tablespoon Olive oil
  • 2 pieces Lime wedges


Instructions

  1. Marinate the chicken with honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper for at least 30 minutes.
  2. Rinse jasmine rice and cook in boiling chicken broth until tender.
