  • 1 1/2 pounds strawberries (24 oz./680 grams), quartered or diced
  • 1/3 cup granulated sugar (67 grams)
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cornstarch (16 grams)
  • 1/2 teaspoon vanilla extract
  • Pinch of kosher salt


Instructions

  1. Prepare the strawberries by slicing or dicing them, reserving 1/3 for later.
  2. In a saucepan, combine 2/3 of the strawberries with sugar.
  3. In a small bowl, mix lemon juice, cornstarch, vanilla extract, and salt until smooth to create a slurry.
  4. Add the slurry to the saucepan and stir over medium heat until boiling.
  5. Reduce heat and stir for 4-5 minutes until the mixture thickens.
  6. Remove from heat and fold in the reserved strawberries until well coated.
  7. Allow to cool before transferring to an airtight container; refrigerate until chilled.
