Ingredients

Scale
  • 2 large eggs
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional)
  • ¼ cup all-purpose flour
  • ¼ teaspoon baking powder
  • ½ teaspoon white vinegar or lemon juice
  • 2 tablespoons granulated sugar
  • Neutral oil (for greasing)

Instructions

  1. Gather and measure all ingredients accurately.
  2. Separate the egg yolks and whites into two bowls. Beat yolks with milk, vanilla, and lemon zest until combined.
  3. In another bowl, sift together flour, baking powder, and half the sugar; mix with yolk mixture until smooth.
  4. Whip egg whites in a clean bowl with vinegar until soft peaks form; gradually add remaining sugar and beat until stiff peaks form.
  5. Gently fold one-third of the egg whites into the yolk mixture to lighten it, then fold in the remaining whites carefully.
  6. Heat a nonstick skillet over low-medium heat and grease lightly with oil. Spoon dollops of batter onto the skillet and cover with a lid.
