  • 50g butter
  • 1200ml beef stock
  • 15 sprigs of fresh thyme
  • 400g baguette, sliced
  • 150g Comté cheese, grated
  • Olive oil, salt, and black pepper to taste


Instructions

  1. Prepare the onions by peeling and slicing them thinly.
  2. In a large saucepan over medium heat, add 2 tablespoons of olive oil and the sliced onions with a pinch of salt. Cook until softened and pale golden (about 30 minutes), stirring occasionally.
  3. Add minced garlic and butter; cook for an additional 5 minutes until fragrant.
  4. Pour in the beef stock while scraping the bottom of the pan to deglaze. Add thyme leaves and let simmer for another 10 minutes.
  5. Taste the soup; adjust seasoning if necessary.
  6. Divide soup into oven-proof bowls, topping each with baguette slices and generous amounts of grated Comté cheese.
  7. Place bowls under a hot grill until cheese is melted and golden brown. Finish with cracked black pepper before serving.
