  • ½ teaspoon baking soda

  • ¾ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • ¼ cup vegetable oil
  • 2 large eggs
  • ¾ cup buttermilk
  • 1 ½ teaspoons vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)


Instructions

  1. Macerate strawberries by tossing them with granulated sugar; let sit for 10–15 minutes. Drain and coat with flour.
  2. Preheat oven to 350°F (175°C) and prepare your loaf pan with parchment paper.
  3. In a large bowl, mix together flour, baking powder, baking soda, and salt.
  4. In another bowl, whisk together sugars, butter, oil, eggs, buttermilk, and vanilla until smooth.
  5. Combine wet ingredients with dry ingredients gently until just mixed; fold in floured strawberries.
  6. Pour batter into prepared pan and bake for 55–65 minutes until a skewer comes out clean.
  7. Cool on a wire rack; drizzle with glaze after cooling completely.
