Ingredients

  • 1 lb ground beef
  • 3 medium russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup frozen corn
  • 1 cup canned black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1 avocado, diced
  • Salt and pepper to taste


Instructions

  1. In a large skillet over medium heat, heat olive oil. Add diced potatoes and cook for 10-12 minutes until golden brown and tender. Remove from skillet and set aside.
  2. In the same skillet, add chopped onion and minced garlic. Sauté for 2-3 minutes until softened.
  3. Add ground beef to the skillet with onions; break apart while cooking until browned (about 6-8 minutes). Drain excess fat if necessary.
  4. Stir in taco seasoning with water; simmer for 2-3 minutes to meld flavors.
  5. Mix in corn, black beans, and cooked potatoes; cook for another 2 minutes until heated through.
  6. Serve warm topped with cheese, sour cream, salsa, avocado, and cilantro.
