- 1 lb ground beef
- 3 medium russet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1/4 cup water
- 1 cup frozen corn
- 1 cup canned black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream
- 1/2 cup salsa
- 1 avocado, diced
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, heat olive oil. Add diced potatoes and cook for 10-12 minutes until golden brown and tender. Remove from skillet and set aside.
- In the same skillet, add chopped onion and minced garlic. Sauté for 2-3 minutes until softened.
- Add ground beef to the skillet with onions; break apart while cooking until browned (about 6-8 minutes). Drain excess fat if necessary.
- Stir in taco seasoning with water; simmer for 2-3 minutes to meld flavors.
- Mix in corn, black beans, and cooked potatoes; cook for another 2 minutes until heated through.
- Serve warm topped with cheese, sour cream, salsa, avocado, and cilantro.
