Ingredients
- 2 large eggs
- ½ cup pumpkin puree
- ⅓ cup pure maple syrup
- ¼ cup coconut sugar
- ½ cup melted coconut oil
- 1 tsp vanilla extract
- ⅔ cup oat flour
- ¾ cup rolled oats
- 1 tbsp pumpkin pie spice
- ½ tsp baking soda
- ½ cup chocolate chips
Instructions
- Preheat your oven to 350ºF (175ºC) and line an 8×8 inch baking pan with parchment paper or grease it lightly.
- In a mixing bowl, whisk together eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
- Gradually add oat flour, rolled oats, pumpkin pie spice, and baking soda to the wet mixture. Fold in chocolate chips gently.
- Pour the batter into the prepared baking pan and sprinkle additional chocolate chips on top if desired.
- Bake for 24 – 26 minutes or until a toothpick inserted comes out clean.
- Allow to cool for at least 10 minutes before cutting into squares.
