Ingredients
- 60 ml milk
- 120 ml water
- 21 g active dry yeast
- 50 g sugar
- 550 g Manitoba flour (or bread flour)
- 2 eggs
- 1 egg yolk
- 70 g unsalted butter
- 750 ml vegetable oil (for frying)
- Fillings: Chocolate spread and apricot jam
Instructions
- Prepare the yeast mixture by combining lukewarm milk, water, yeast, and sugar in a bowl. Stir well and let it sit for about 10 minutes until bubbly.
- In a stand mixer, combine flour, eggs, egg yolk, salt, and the yeast mixture. Knead on medium speed for about 6-8 minutes until elastic. Incorporate butter and knead for another 3-4 minutes.
- Cover the dough with cling film and allow it to rise at room temperature for 1 to 1½ hours until it doubles in size.
- Roll out the dough to about 2 cm thick and cut out heart shapes using a cookie cutter. Let them rise again for an hour.
- Heat oil in a large pan to 170-180°C (340-355°F). Fry doughnuts until golden brown on both sides.
