  • 3 ounces tomato paste
  • 3 ounces red curry paste
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 (14-ounce) can coconut milk
  • Rice or naan for serving
  • Cilantro (for garnish)


Instructions

  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Sauté diced onion until softened, about 3-4 minutes.
  3. Stir in grated ginger and minced garlic; cook for another minute until fragrant.
  4. Add garam masala, chili powder, mustard seeds, coriander, and curry powder; toast for 1-2 minutes.
  5. Add chicken chunks; cook until browned on all sides, about 5-7 minutes.
  6. Incorporate both tomato pastes; cook for an additional 2-3 minutes.
  7. Season with salt and black pepper; pour in coconut milk and stir well.
  8. Bring to a simmer; cook for about 15-20 minutes until chicken is cooked through and sauce thickens.
  9. Taste and adjust seasoning as needed.
  10. Serve over rice or with naan, garnished with fresh cilantro.
