  • 2/3 cup Granulated Sugar
  • 2 large Eggs
  • 1.5 tsp Vanilla Extract
  • 1.5 cups All-Purpose Flour
  • 1.75 tsp Baking Powder
  • 1/2 cup Milk (or plant-based milk)
  • 2 medium Apples, diced
  • 1/3 cup Brown Sugar
  • 1 tsp Ground Cinnamon
  • 1/2 cup Powdered Sugar
  • 1-2 tbsp Milk for Glaze
  • 1/4 tsp Vanilla Extract for Glaze


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, whisk together softened unsalted butter, granulated sugar, eggs, and vanilla extract until smooth.
  3. In another bowl, mix all-purpose flour and baking powder; gradually add to the wet mixture until just combined.
  4. Slowly incorporate the milk and gently fold in diced apples.
  5. Pour half the batter into the prepared loaf pan. Sprinkle half of the brown sugar and cinnamon mixture over it. Add the remaining batter and top with the rest of the sugar-cinnamon mix.
  6. Bake for approximately 55 minutes or until golden brown and a toothpick comes out clean.
  7. Let cool slightly before serving. Drizzle with glaze made from powdered sugar, milk, and vanilla extract if desired.
