- 15 oz can tomato sauce
- 15 oz can diced tomatoes
- 15 oz can cannellini beans, drained and rinsed
- 15 oz can dark red kidney beans, drained and rinsed
- 4 cups chicken stock
- 1 cup uncooked ditalini pasta
- Kosher salt
- Fresh cracked pepper
- Grated Parmesan cheese (for garnish)
- Fresh chopped parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned; remove with a slotted spoon.
- In the same pot, reduce heat and sauté onion, carrots, and celery with salt and pepper for about 5 minutes until softened.
- Stir in garlic, Italian seasoning, and tomato paste; cook for another minute.
- Add tomato sauce, diced tomatoes, both types of beans, chicken stock, uncooked ditalini pasta, and the cooked beef back into the pot. Season to taste.
- Bring to a simmer over medium-high heat; then reduce to medium-low. Simmer for about 5 minutes until pasta is al dente.
- Adjust seasoning if needed; garnish with grated Parmesan cheese and parsley before serving.
