  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 6 cloves garlic, minced
  • 2 tablespoons Italian seasoning
  • 1 tablespoon tomato paste
  • 15 oz can tomato sauce
  • 15 oz can diced tomatoes
  • 15 oz can cannellini beans, drained and rinsed
  • 15 oz can dark red kidney beans, drained and rinsed
  • 4 cups chicken stock
  • 1 cup uncooked ditalini pasta
  • Kosher salt
  • Fresh cracked pepper
  • Grated Parmesan cheese (for garnish)
  • Fresh chopped parsley (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned; remove with a slotted spoon.
  2. In the same pot, reduce heat and sauté onion, carrots, and celery with salt and pepper for about 5 minutes until softened.
  3. Stir in garlic, Italian seasoning, and tomato paste; cook for another minute.
  4. Add tomato sauce, diced tomatoes, both types of beans, chicken stock, uncooked ditalini pasta, and the cooked beef back into the pot. Season to taste.
  5. Bring to a simmer over medium-high heat; then reduce to medium-low. Simmer for about 5 minutes until pasta is al dente.
  6. Adjust seasoning if needed; garnish with grated Parmesan cheese and parsley before serving.
