  • 1 cup pastina pasta (stelline shape)
  • 1 brown onion
  • 2 carrots
  • 2 celery sticks
  • 4 garlic cloves
  • 6 cups low-sodium vegetable broth (or chicken broth)
  • Salt and black pepper to taste


Instructions

  1. Roughly chop the onion, carrots, celery, and garlic.
  2. In a large pot, combine the vegetable broth and chopped vegetables; season with salt and pepper. Simmer over medium-high heat for about 20 minutes.
  3. Once the vegetables are tender, remove them from the pot and blend them until smooth with a little water.
