  • 12 ounces sweet potato glass noodles
  • 16 ounces beef (cut into strips)
  • 1 large carrot (peeled and julienned)
  • 1 medium yellow onion (thinly sliced)
  • 3 mushrooms (thinly sliced)
  • 2 cups baby spinach
  • 2 stalks green onion (cut into pieces)
  • 2 large eggs (beaten)
  • 7 tablespoons soy sauce (light sodium)
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 2 tablespoons toasted sesame oil
  • Oil (for cooking)
  • Salt and black pepper (as needed)


Instructions

  1. Prepare the sauce by mixing soy sauce, honey, brown sugar, and sesame oil in a bowl.
  2. Cook the sweet potato noodles in boiling water for 10-15 minutes until tender. Drain and rinse with cold water.
  3. In a nonstick pan, make an egg crepe by pouring in beaten eggs and cooking until set.
  4. Sear the beef strips in the same pan until golden brown; then remove.
  5. Sauté vegetables in the pan starting with carrots, followed by onions, mushrooms, spinach, and green onions.
  6. Combine cooked noodles with sautéed ingredients and sauce in the stir-fry pan; toss until well mixed.
  7. Serve warm or at room temperature.
