- 2/3 cup all-purpose flour
- 1/3 cup packed light brown sugar
- 1/4 tsp salt
- 1/4 cup melted unsalted butter
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup Greek yogurt
- 3/4 cup fresh blueberries (to fold in, tossed with 1 tbsp flour)
- 3/4 cup fresh blueberries (for topping)
- 6 oz cream cheese, softened
- 3 tbsp granulated sugar
- 1 tsp cornstarch
- 1 tsp vanilla extract
- 3/4 cup powdered sugar
- 1 1/2 to 2 1/2 tsp milk or cream
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining with paper liners.
- In a large mixing bowl, combine 2/3 cup all-purpose flour, light brown sugar, and salt.
- In another bowl, mix together melted butter, 1 cup all-purpose flour, baking powder, granulated sugar, vegetable oil, egg, vanilla extract, and Greek yogurt until well blended.
- Gently fold in 3/4 cup of blueberries coated in flour to prevent sinking.
- For the cream cheese filling, beat softened cream cheese with granulated sugar until smooth; add cornstarch and vanilla extract. Gradually mix in powdered sugar and adjust consistency with milk.
- Spoon half of the muffin batter into each muffin cup. Add a dollop of cream cheese filling followed by remaining batter and extra blueberries on top.
- Bake for about 22 minutes or until golden brown; a toothpick should come out clean.
- Allow to cool for five minutes before transferring to a wire rack to cool completely.
