Ingredients
- 2 lbs ground beef
- 1 1/2 cups panko bread crumbs

- 2 tbsp gochujang
- 5 green onions (minced)
- 2 large eggs (lightly beaten)
- 3 tbsp apricot jam
- 2 tbsp gochujang
- 1 tbsp rice apple vinegar
- 1 tbsp honey
- 2 tsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp granulated garlic powder (or 2 cloves garlic, minced)
Instructions
- Preheat oven to 350°F (175°C).
- Sauté onions in vegetable oil until translucent; add garlic and cook for an additional two minutes.
- In a mixing bowl, combine cooled onion mixture with minced green onions, gochujang, eggs, and salt.
- In a separate bowl, mix ground beef with panko breadcrumbs and the onion-gochujang mixture until just combined.
- Shape the mixture into a loaf in a loaf pan or freeform on a baking sheet.
- Bake for about 40 minutes until it reaches an internal temperature of 140°F (60°C).
- Prepare the glaze by combining all glaze ingredients in a bowl; mix until smooth.
- Spoon the glaze over the meatloaf and return to the oven until the internal temperature reaches 160°F (71°C), approximately another 10-15 minutes.
