  • 2 lbs ground beef
  • 1 1/2 cups panko bread crumbs
  • 1 large onion (finely diced)
  • 8 cloves garlic (crushed)
  • 2 tbsp gochujang
  • 5 green onions (minced)
  • 2 large eggs (lightly beaten)
  • 3 tbsp apricot jam
  • 2 tbsp gochujang
  • 1 tbsp rice apple vinegar
  • 1 tbsp honey
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp granulated garlic powder (or 2 cloves garlic, minced)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sauté onions in vegetable oil until translucent; add garlic and cook for an additional two minutes.
  3. In a mixing bowl, combine cooled onion mixture with minced green onions, gochujang, eggs, and salt.
  4. In a separate bowl, mix ground beef with panko breadcrumbs and the onion-gochujang mixture until just combined.
  5. Shape the mixture into a loaf in a loaf pan or freeform on a baking sheet.
  6. Bake for about 40 minutes until it reaches an internal temperature of 140°F (60°C).
  7. Prepare the glaze by combining all glaze ingredients in a bowl; mix until smooth.
  8. Spoon the glaze over the meatloaf and return to the oven until the internal temperature reaches 160°F (71°C), approximately another 10-15 minutes.
