  • ½ cup milk
  • 1 cup blueberries (fresh or frozen)
  • 2 tbsp melted butter (for glaze)
  • ½ cup powdered sugar
  • 2 tbsp freshly squeezed lemon juice (for glaze)
  • ½ tsp vanilla extract (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, salt, and baking powder.
  3. In a large bowl, combine melted butter, sugar, vanilla extract, eggs, lemon zest, and lemon juice until well mixed.
  4. Gradually mix in the dry ingredients with milk until just combined; be careful not to overmix.
  5. Gently fold in blueberries until evenly distributed.
  6. Pour batter into the prepared pan and smooth the top. Bake for 55-60 minutes or until a toothpick comes out clean.
  7. Allow cooling for about 15 minutes before transferring to a platter.
  8. For the glaze, whisk melted butter with powdered sugar and lemon juice until smooth; drizzle over the cooled loaf.
