Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 3 tbsp extra virgin olive oil
- 2 medium zucchini
- 2 red bell peppers
- 1 large red onion
- 2 cups cherry tomatoes
- 1 cup Kalamata olives
- 4 cloves garlic
- 2 tsp dried oregano
- Juice of 1 lemon
- 0.5 cup crumbled feta cheese (optional)
Instructions
- Prep all ingredients by chopping the chicken and slicing the vegetables.
- In a large skillet, heat 2 tbsp olive oil over medium-high heat. Cook the chicken until golden brown and cooked through, about 5–7 minutes. Season with salt and black pepper.
- Add remaining olive oil to the skillet, then sauté onions, garlic, zucchini, red bell peppers, and cherry tomatoes until tender (about 5 minutes).
- Combine the cooked chicken with sautéed vegetables in the skillet. Season with oregano, salt, pepper, basil, and thyme.
- Finish by adding lemon juice and Kalamata olives; mix well until heated through.
