  • 3 cups crushed tortilla chips
  • 15 oz black beans (drained and rinsed)
  • 2 cups chopped cooked chicken
  • 21 oz cream of chicken soup
  • 10 oz can Rotel tomatoes (undrained)
  • 2 cups shredded jack cheese
  • 2 cups shredded medium cheddar cheese
  • 1 tomato (diced)
  • Fresh cilantro (chopped)
  • Jalapeños (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 13×9 casserole dish.
  2. Spread about 1 cup of crushed tortilla chips on the bottom of the dish.
  3. Layer cooked chicken evenly over the chips, followed by the black beans.
  4. In a bowl, mix the cream of chicken soup with ground cumin. Spread over the chicken and beans, then top with Rotel tomatoes.
  5. Sprinkle cheeses on top, followed by the remaining crushed tortilla chips.
  6. Bake for 25-30 minutes until hot and bubbly.
  7. Garnish with diced tomatoes and chopped cilantro before serving.
