Description

Transform strawberry tops, often discarded, into a delicious syrup that adds natural sweetness and vibrant flavor to a variety of dishes. Ideal for drizzling over pancakes, mixing into yogurt, or enhancing cocktails and mocktails, this syrup is both versatile and eco-friendly.


Ingredients

  • 6 cups strawberry tops
  • 4 cups sugar
  • 4 cups water


Instructions

  1. Wash the strawberry tops thoroughly to remove any dirt.
  2. Cut off the tops and add them to a small pot. Cover with water.
  3. Stir in the sugar, maintaining a 1:1 sugar-to-water ratio.
  4. Bring to a boil, then simmer for 10-15 minutes until the liquid turns red.
  5. Strain the mixture using a fine mesh sieve to extract all the liquid.
  6. Return the juice to the pot and simmer until reduced by one-fourth and thickened slightly.
  7. Let cool before pouring into jars for storage.
