Instructions
- Wash the strawberry tops thoroughly to remove any dirt.
- Cut off the tops and add them to a small pot. Cover with water.
- Stir in the sugar, maintaining a 1:1 sugar-to-water ratio.
- Bring to a boil, then simmer for 10-15 minutes until the liquid turns red.
- Strain the mixture using a fine mesh sieve to extract all the liquid.
- Return the juice to the pot and simmer until reduced by one-fourth and thickened slightly.
- Let cool before pouring into jars for storage.
