Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent (3–4 minutes). Stir in minced garlic and diced red bell pepper; cook for an additional 2 minutes.
  2. Add cubed chicken breast to the skillet. Season with salt, pepper, and grated ginger; cook until browned (5–7 minutes).
  3. Mix in jasmine rice until combined with the chicken mixture. Add cubed pineapple, soy sauce (or alternative), and chicken broth.
  4. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 15 minutes or until rice is cooked through.
