  • 3 pounds boneless skinless chicken thighs or breasts
  • 1 can chipotle peppers in adobo sauce
  • 4 tablespoons fresh lime juice
  • 4 tablespoons fresh orange juice
  • 1/2 cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion
  • 2 teaspoons olive oil
  • 1 teaspoon cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground coriander (optional)
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper


Instructions

  1. In a mixing bowl, combine chipotle peppers, lime juice, orange juice, cilantro, garlic cloves, onion quarters, cumin, oregano, smoked paprika, salt, and pepper. Blend until smooth.
  2. Place chicken in a resealable bag or shallow dish and pour the marinade over it. Ensure all pieces are coated. Seal or cover and refrigerate for at least 30 minutes (up to overnight).
  3. Preheat grill over medium-high heat. Remove chicken from marinade and discard marinade.
  4. Grill chicken for about 5–7 minutes on each side until fully cooked through (internal temperature of 165°F).
  5. Let rest for a few minutes before slicing and serve with your favorite sides.
