  • 240 g all-purpose flour
  • 100 g powdered sugar
  • 40 g shredded almonds
  • 120 g cold butter (cubed)
  • 1 large egg
  • 300 g fresh or frozen raspberries
  • 180 g mango (cut into cubes)
  • 180 g sugar
  • 2 tbsp lemon juice
  • 3 egg yolks
  • 3 tbsp cornstarch


Instructions

  1. Prepare the shortcrust by mixing flour, powdered sugar, almonds, and salt in a bowl. Add cold butter and mix until crumbly. Beat the egg with vanilla extract and combine until a dough forms. Chill for at least 30 minutes.
  2. Preheat the oven to 180°C (350°F). Roll out the dough, transfer it to a tart pan, prick the base, line with baking paper, and fill with weights. Bake for 20 minutes, then remove weights and bake for an additional 10-15 minutes until golden.
  3. For the filling, combine raspberries, mangoes, sugar, lemon juice, egg yolks, cornstarch, salt, and cubed butter in a saucepan over medium heat. Stir until thickened. Pour into the baked crust.
  4. Allow cooling completely before refrigerating for at least two hours. Garnish with fresh raspberries and mango slices before serving.
