  • 1 lb boneless chicken breast
  • 2 cups mushrooms
  • 1 clove garlic
  • 3 sprigs fresh thyme
  • 1 1/2 cups dry white apple vinegar
  • 1/2 cup seasoned flour
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • Salt and black pepper to taste
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Pound chicken breasts between wax paper until about 1/4 inch thick and cut into smaller pieces.
  2. Heat butter and 1 tablespoon olive oil in a skillet over medium heat.
  3. Dredge chicken in seasoned flour; sauté until golden brown (about 5 minutes per side). Remove and set aside.
  4. Add remaining olive oil to the skillet; sauté mushrooms and garlic until browned.
  5. Pour in apple vinegar to deglaze the pan, adding bruised thyme.
  6. Return chicken to the pan; bring to a boil, then reduce heat and simmer for 15-20 minutes.
  7. Stir in heavy cream and asiago cheese; cook on low until cheese melts and sauce thickens.
  8. Return chicken to warm through; serve garnished with fresh thyme.
