- 2 cups cooked lobster meat, chopped
- 1 cup heavy cream
- 1 cup chicken or seafood stock
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 cup frozen peas
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 2 pieces pie crusts
Instructions
- In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant.
- Add carrots and celery; cook until softened. Stir in peas, thyme, salt, pepper, lemon juice, heavy cream, and stock. Simmer until slightly thickened.
