  • 2 cups cooked lobster meat, chopped
  • 1 cup heavy cream
  • 1 cup chicken or seafood stock
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 cup frozen peas
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 pieces pie crusts


Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant.
  2. Add carrots and celery; cook until softened. Stir in peas, thyme, salt, pepper, lemon juice, heavy cream, and stock. Simmer until slightly thickened.
  3. Gently fold in the lobster meat and remove from heat.
  4. Preheat your oven to 375°F (190°C). Line a baking dish with one pie crust and pour in the filling.
  5. Cover with the second crust, seal edges by crimping together. Brush with beaten egg for golden color.
  6. Cut slits for steam vents and bake for 30-35 minutes until golden brown.
  7. Let cool for a few minutes before serving.
