- 32 oz low sodium beef broth
- 1 yellow onion
- 2 large carrots
- 3 stalks celery
- 5 cloves garlic
- 2 Tbsp tomato paste
- 32 oz marinara sauce
- 1 can red beans
- 1 can cannellini beans
- 1 cup dry ditalini pasta
Instructions
- In a large pot over medium-high heat, crumble the chicken sausage and cook until fully browned.
- Add chopped onion, sliced carrots, and celery; sauté until tender. Stir in minced garlic for one more minute.
- Pour in beef broth along with tomato paste and marinara sauce; mix well.
- Bring to a boil, then reduce heat to low, cover and simmer for about 10 minutes.
- Stir in ditalini pasta, red beans, and cannellini beans; cook on low until pasta is al dente (about 5 minutes).
