  • 1 small yellow onion, diced
  • 5 cloves garlic, minced
  • 4 cups chicken broth or vegetable broth
  • 2 cups marinara sauce
  • 15 oz can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • ¼ teaspoon dried rosemary
  • ¼ teaspoon red pepper flakes (optional)
  • 8 lasagna noodles broken into bite-sized pieces
  • 1 teaspoon balsamic vinegar
  • ½ cup freshly grated parmesan
  • Salt and pepper to taste
  • 1 cup grated mozzarella
  • ½ cup ricotta
  • Chopped fresh parsley (optional)


Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease and transfer to the slow cooker.
  2. Add diced onion, minced garlic, broth, marinara sauce, diced tomatoes, and seasonings to the slow cooker. Stir well to combine.
  3. Cover and cook on Low for 6-8 hours or High for 3-4 hours.
  4. In the last 30 minutes of cooking, stir in broken lasagna noodles and cover until they are tender.
  5. Before serving, mix in balsamic vinegar and grated parmesan cheese; season with salt and pepper to taste.
