  • 3 cups white vinegar
  • 1 1/2 cups water
  • 1 tablespoon sugar
  • 2 tablespoons coarse salt
  • 18 hard-boiled eggs
  • 1 jalapeño pepper (sliced)
  • 6 – 8 sprigs fresh dill
  • 4 bay leaves
  • 1/2 large white onion (thinly sliced)
  • 2 garlic cloves


Instructions

  1. In a large saucepan, combine vinegar, water, sugar, and salt. Heat over medium heat until dissolved; then remove from heat and let cool completely.
  2. Divide hard-boiled eggs between two quart-sized mason jars. Add jalapeño slices, dill springs, bay leaves, onion slices, garlic cloves, and pickling spice.
  3. Once cooled, pour the brine over the eggs until fully submerged. Seal jars with lids.
  4. Refrigerate jars for 7 – 10 days to allow flavors to meld before serving.
