Ingredients
- 1 medium spaghetti squash
- 1 tbsp olive oil
- 2 cloves garlic
- 2 cups fresh spinach
- 1 can artichokes
- 4 oz cream cheese
- 2 tbsp mayonnaise
- 1/2 cup Parmesan cheese
- 1/2 cup mozzarella cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Halve the spaghetti squash lengthwise and scoop out the seeds. Drizzle with olive oil, salt, and pepper.
- Place cut-side down on a baking sheet and roast for about 40-45 minutes until tender.
- In a mixing bowl, combine cream cheese, mayonnaise, minced garlic, spinach, drained artichokes, Parmesan cheese, and mozzarella cheese until smooth.
- Flip the roasted squash cut-side up and fill generously with the prepared mixture.
- Sprinkle additional Parmesan on top and bake for another 20 minutes until golden brown.
