  • 1/2 cup sour cream or yogurt

  • 1 Tbsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups diced strawberries (fresh or frozen)


Instructions

  1. Preheat your oven to 425°F. Line a muffin tin with liners or spray with nonstick spray.
  2. In a large bowl, mash the ripe bananas. Stir in the sugar, sour cream (or yogurt), milk, egg, and vanilla until smooth.
  3. Sift together the flour, baking powder, baking soda, and salt; gently mix into the wet ingredients until just combined.
  4. Fold in diced strawberries carefully to avoid breaking them.
  5. Fill each muffin cup to the top with batter and optionally add extra strawberries on top.
  6. Bake for 5 minutes at 425°F, then reduce heat to 350°F and bake for an additional 10-12 minutes until golden brown.
  7. Allow muffins to cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
