Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a mixing bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, milk, vegetable oil, and vanilla until combined. Gradually add to dry ingredients and mix until smooth. Stir in boiling water.
  4. Divide batter between the prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  5. For the strawberry filling: Cook chopped strawberries with sugar in a saucepan until soft. Add lemon juice and cornstarch mixture; cook until thickened.
  6. For the ganache: Heat heavy cream until simmering, pour over chopped chocolate, let sit for a few minutes then stir until smooth.
  7. Assemble by layering one cake with half of the strawberry filling, topping with the second layer and pouring ganache on top.
