  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries


Instructions

  1. Preheat your oven to 325°F (163°C) and line a mini muffin tin or an 8×8-inch pan with parchment paper.
  2. For the crust, mix crushed graham crackers with melted butter and press into the bottom of the prepared pan.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in sour cream, vanilla extract, and strawberry puree until well combined.
  4. Pour the cheesecake mixture over the crust and bake for 20–25 minutes for mini bites or 35–40 minutes for an 8×8 pan until slightly jiggly in the center.
  5. Allow to cool at room temperature before refrigerating for at least four hours.
  6. For the topping, mix crushed Oreos with freeze-dried strawberries and melted butter. Sprinkle this mixture on top of each bite before serving.
