  • 5 tablespoons melted butter
  • 1½ cups graham cracker crumbs
  • 3 tablespoons sugar
  • 1 teaspoon almond extract
  • 10 strawberries (sliced)
  • 16 ounces cream cheese (softened)
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice (freshly squeezed)
  • 1 cup cold whipping cream (chilled)
  • 3 tablespoons vegan gelatin


Instructions

  1. Prepare the crust by mixing melted butter, graham cracker crumbs, sugar, and almond extract in a bowl. Press into the bottom of a 9×9 inch baking dish.
  2. Layer sliced strawberries evenly over the crust.
  3. In another bowl, beat softened cream cheese with powdered sugar until smooth. Mix in vanilla extract and lemon juice.
  4. Whip cold cream until stiff peaks form and gently fold into the cream cheese mixture.
  5. Prepare vegan gelatin according to package instructions and let cool slightly before pouring it over the cream cheese filling.
  6. Spread the filling over strawberries and top with Cool Whip. Refrigerate for at least 2 hours before serving.
