  • 1 1/2 cups freeze-dried strawberries (blended into powder)
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1-2 tablespoons milk (for glaze)
  • 1 cup powdered sugar (for glaze)
  • 1/4 teaspoon pure vanilla extract (for glaze)
  • 1 tablespoon freeze-dried strawberries (processed for glaze)


Instructions

  1. Preheat the oven to 325°F (160°C) and line baking sheets with parchment paper.
  2. Blend freeze-dried strawberries in a food processor until powdery.
  3. In a large mixing bowl, cream together softened butter and powdered sugar until smooth.
  4. Mix in vanilla extract and blend in strawberry powder (reserve some for glaze).
  5. Gradually add flour until a soft dough forms.
  6. Roll out dough to about 1/4 inch thick on a floured surface and cut into shapes.
  7. Bake for 12-15 minutes until edges are lightly golden; cool for 5 minutes before transferring to a rack.
  8. For the glaze, whisk together reserved strawberry powder, milk, and powdered sugar; drizzle over cooled cookies.
