Ingredients
- 4 large Portobello mushrooms (stems removed)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 cup spinach (chopped)
- ½ cup cherry tomatoes (diced)
- ¼ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking sheet.
- Brush both sides of the mushrooms with olive oil and place gill-side up on the baking sheet. Season with salt and pepper.
- In a frying pan over medium heat, sauté minced garlic in 1 tablespoon of olive oil for about 1 minute. Add chopped spinach and cook until wilted.
- Remove from heat and mix in diced cherry tomatoes, breadcrumbs, Parmesan cheese, Italian seasoning, and additional salt and pepper.
- Spoon the filling into each mushroom cap and top with shredded mozzarella cheese.
- Bake for 15–18 minutes until mushrooms are tender and cheese is melted.
