  • 4 large Portobello mushrooms (stems removed)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 cup spinach (chopped)
  • ½ cup cherry tomatoes (diced)
  • ¼ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking sheet.
  2. Brush both sides of the mushrooms with olive oil and place gill-side up on the baking sheet. Season with salt and pepper.
  3. In a frying pan over medium heat, sauté minced garlic in 1 tablespoon of olive oil for about 1 minute. Add chopped spinach and cook until wilted.
  4. Remove from heat and mix in diced cherry tomatoes, breadcrumbs, Parmesan cheese, Italian seasoning, and additional salt and pepper.
  5. Spoon the filling into each mushroom cap and top with shredded mozzarella cheese.
  6. Bake for 15–18 minutes until mushrooms are tender and cheese is melted.
