  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 8 oz cream cheese (room temperature)
  • 2 teaspoons vanilla extract
  • 1/4 cup granulated sugar for cream cheese swirl
  • 1 large egg yolk (room temperature) for cream cheese swirl


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until well combined. Gradually add the dry mixture until just combined.
  4. In another bowl, beat room temperature cream cheese until smooth; then add granulated sugar, egg yolk, and vanilla extract until blended.
  5. Fill muffin tins about 3/4 full with batter and top with the cream cheese mixture. Use a toothpick to gently swirl it into the batter.
  6. Bake for 18 to 20 minutes or until a toothpick inserted comes out clean with just a few moist crumbs.
