  • 1 1/2 cups light brown sugar (packed)
  • 16 tablespoons unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 1 ½ tablespoons vanilla extract
  • 2 large eggs (room temperature)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 3 ¼ cups all-purpose flour
  • 1 1/2 cups dark chocolate (coarsely chopped or chips)
  • Sea salt flakes for topping (optional)


Instructions

  1. Prepare the hard caramel and let it cool slightly.
  2. Preheat your oven to 350°F (175°C).
  3. In a mixing bowl, combine room temperature butter with both sugars until creamy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. In another bowl, whisk together baking powder, baking soda, sea salt, and flour. Gradually add to the wet mixture until just combined.
  5. Gently fold in dark chocolate pieces and cooled caramel chunks.
  6. Drop rounded balls of dough onto a parchment-lined baking sheet. Optionally sprinkle sea salt flakes on top.
  7. Bake for about 12 minutes or until golden brown around the edges. Cool on the baking sheet for a few minutes before transferring to a wire rack.
